Punjabi Yaarana, a poignant 10-day culinary pop-up celebrating the spirit of friendship through the colorful customs of Punjab, is presented by the Ministry of Kebabs. From August 1st to August 10th, 2025, the restaurant will be transformed into a sincere celebration of Punjabi hospitality and legacy, carefully created by the renowned Chef Harjinder Singh, affectionately known as Chef Sweety Singh throughout India.

Chef Sweety Singh, a stalwart of traditional Punjabi cooking, brings with him more than thirty years of culinary expertise that was handed down from his father, Sardar Gyani Santokh Singh, who operated a well-liked dhaba in Delhi in the 1950s. Sweety Singh started working in the kitchen at the age of 19 without any official training, driven by his father’s unwavering conviction in slow, soulful cuisine, family values, and instinct. The kitchen continued to be a hallowed place where recipes were respected rather than rushed, even after his father’s vision loss. Chef Sweety Singh, known as the Master of Spices, bases his concept on simplicity: no artificial coloring, no shortcuts, and no gravies made with cream or nuts. Using only hand-pounded spices, asli ghee, and traditional methods that allow each ingredient to speak for itself, his cuisine is straightforward.

Diners are invited to celebrate the unbreakable link of eternal friendship over a heart-stirring tour through Punjab’s rustic kitchens at “Punjabi Yaarana” in the Ministry of Kebabs.

On offer are dishes like Tandoori Kukad, Dal Amritsari, Kachhe Ghare Da Saag with Makki di Roti, Amritsari Macchi, Pindi Chole Bhature, Gur ka Halwa, and Desi Ghee Pinni.

Chef Sweety Singh said, “Authentic Punjabi cuisine embodies emotion, memory, and tradition in addition to flavors. Every meal I make has roots in my early years and the values my father taught me. It is a privilege for me to bring this experience to Kolkata, and I am particularly happy to do it at the Novotel Kolkata, where warmth and tradition are genuinely honored.
