Caviar Trails is a careful investigation of flavors, textures, and procedures that is rooted in authenticity but characterized by modern elegance. On offer are Anti Pasti, led by the classic Caviale Al Classico, white Asparagus paired with citrus emulsion and seared scallop, tossed lobster in a Pinot Grigio emulsion with Sicilian lemon gremolata and red prawns with asparagus, marinated burrata and burnt onion, each crowned with caviar, potato and leek soup enriched with cuttlefish, pancetta crumble and caviar, Fettuccine allo scoglio, Parmigiano Reggiano risotto with pancetta and caviar, Secondi Piatti, including Potato gnocchi tossed in burnt sage butter on pumpkin purée with toasted pine nuts and caviar and pan seared Salmon finished with a Pinot Grigio emulsion, basil oil and caviar.
