Flavours Of Rajasthan- A Special Culinary Journey At Shamiana

With its upcoming festival, Flavours of Rajasthan, Taj City Centre New Town in Kolkata will take the city’s foodies to the heart of Rajasthan. From April 21 to 26, 2026, Shamiana, the renowned all-day dining establishment, will host this exclusive culinary showcase.
From the robust, spicy cuisine of Jodhpur and the Marwar heartlands to the royal kitchens of Jaipur and Udaipur, the festival honors the varied and colorful palate of one of India’s biggest states. Bold spices, preserved ingredients, and age-old methods created for an arid environment are the foundation of Rajasthani cuisine, which is known for its inventiveness and extravagance.
The menu, which is curated by Chef Manwar Kandari of The Lalit Bagh in Udaipur, offers a variety of signature dishes made with traditional techniques like clay-pot cooking and slow roasting over open flames.

The festival also honors the close cultural ties that exist between Bengal and Rajasthan. The Marwari community has been an essential component of Kolkata’s socioeconomic structure since the 18th century, incorporating their rich culinary customs into the city’s varied dining scene.

The dishes on offer are Jodhpuri Paneer Tikka, Sangri Ki Tikki, Dungri Murgh Tikka, Jinga Jaisamandi, Karare Aloo Tikki, Paneer Ke Sule, Gatte Ki Subzi, Mahi Jaisamand Ki, Laal Maas, Mini Ghewar with Rabdi, Mishri Mawa, Moong Dal Ka Halwa, and many more.
Each dish is a poignant and exquisite tribute to its particular area, encapsulating the spirit of Rajasthan’s varied topography.
