A Fantastic Bihari Food Festival Now At YAYAvar


With an exclusive Bihari Food Festival organised by Regional Chef Rachna Prasad, food consultant and Ambrosia Kitchen founder, YAYAvar, the Indian regional concept restaurant at the Hyatt Centric Ballygunge Kolkata, is poised to transport patrons on an incredible culinary adventure. This culinary celebration, which is planned for April 11–14, invites foodies to savor the authentic, rustic, and rich flavors of Bihar, which have been carefully prepared to highlight the area’s culinary legacy.
Chef Rachna Prasad has carefully chosen a selection of regional specialties for the festival menu, which highlights Bihar‘s rich culinary heritage by showcasing indigenous spices and traditional cooking methods. Visitors can enjoy the Bihari Set Menu, which offers vegetarian and non-vegetarian options.
The dishes on offer are Sattu Sharbat, Mattha, Gud ka Sharbat, Phulauri, Shakarkand ka Tikki, Machchali Saag Tandoor, Charpai Mutton Tikki, Chulha Murga, Godilla, Bharva Parval, Champaran Mutton, Sejana Murga, Machchali Ghattsal, Sattu Paratha, Tehri, and Dhuska.
The Bihari À La Carte Menu offers dishes like Dehati Murga, Aloo Baingan Kalaunji, and Makhana Dal, accompanied by traditional breads and rice. The lavish dinner buffet features Bael Ka Sharbat, Ratalu Ki Sabzi, Boot Besani, Panch Phoran Dal, Marva Roti, and Litti Chokha. Desserts such as Thekua, Ghujia, Makhana Kheer, and Malpua with Rabri are also on offer.
With ingredients sourced locally and traditional spice blends, each dish reflects Bihar’s rich cultural tapestry, providing a genuinely flavourful and immersive dining experience.
