Chef Abhijit Naik’s ‘Memories of Childhood Cuisine’ serves as the inspiration for the Goan Escape promotion at Grand Market Pavilion, the three-meal buffet restaurant at ITC Royal Bengal. The dinner buffet’s special offer, which runs from May 22 to 27, 2024, embodies the spirit of coziness, affection, and family that are fundamental to the Goan culture.

Acclaimed for its breathtaking coastline, verdant surroundings, picturesque waterfalls, and serene backwaters, Goa is a treasure frequently referred to as the Pearl of the East. With its historic temples, churches from the colonial era, and charming Portuguese-style villages, its rich cultural history blends Portuguese and Indian elements. Goan cuisine blends ingredients from Portuguese, African, Muslim, and Hindu dishes, making it extraordinarily rich and varied. To accommodate a wide range of tastes and preferences, it offers a wide selection of foods.

The Grand Market Pavilion’s promotional menu conjures up nostalgic aromas that evoke fond memories associated with family recipes that have been passed down through the years.

The signature dishes include Grandmother’s Homemade Pickles, Chicken Xacuti, Goan Fish Curry with Raw Mango and Red Rice, Pineapple Saasav and Potoleo with Serradura, Varan Bhat (Dal and Rice), Ros Omelette and others.

Growing up in Panjim, Goa, Chef Abhijit Naik maintains family meals, cooking methods, and traditional recipes that are essential to preserving Goa’s culinary and cultural heritage. The guests are intended to be transported to a state of happiness and relaxation through the sensory experience of freshly prepared Rawa Fried Pomfret or beloved local desserts, which embodies the Goan concept of “Susegado”—the slow, carefree savoring of life’s small pleasures.
