Karim’s Entally’s New Menu- A Revival Of Old Calcutta Flavors

Reviving the classic flavors of old Calcutta that formerly characterized the city’s culinary history, Karim’s Entally Restaurant, the city’s pioneer in true Mughlai cuisine, introduced its new heritage menu.
Actor Darshana Banik graced the occasion, enjoying the Mughlai treats and praising the biryani for its rich yet delicate flavor, describing it as a “beautiful reminder of the city’s food legacy”.

Md Aurangzeb, Co-Franchise Owner & Strategy Partner, Karim’s Entally, and Eqbal Alam, Co-Franchise Owner & Operations Partner, Karim’s Entally, also graced the occasion.
The Entally location has been serving Kolkata for seven years, continuing the tradition of Karim’s, which was established in Delhi in 1913 by Chef Haji Karim Uddin. The restaurant is committed to reviving the culinary traditions that have been lost in today’s commercial kitchens with this new menu.

Karim’s has enlisted retired bawarchis from Kolkata’s renowned restaurants to mentor and teach the staff to replicate these original flavors. Their knowledge brings back the traditional Calcutta biryani, which is cooked gently over “Dum” so that the flavors of the rice, mutton, and potatoes meld. The richness of ghee, the sweetness of milk and cream, and the delicate tang of curd and aloo Bukhara are the natural infusions that give the biryani its distinct balance of sweet, sour, and spicy instead of using strong masalas. Unlike the masala-heavy varieties of biryani that are popular nowadays, this traditional approach makes the dish flavorful but light.
The highlight dishes of the new menu are:
- Classic Mutton Biryani cooked in the old Calcutta style
- Chitpur-style Mutton Chaap
- Mutton Kassa
Speaking at the event, Darshana Banik said, “People in Kolkata love biryanis. And the way the biryani has been prepared in Karim’s Entally is amazing. It is light yet delicious. So if you are pandal hopping during the Pujas and want to gorge on yummy delicacies, this is the right place for you to be”.

Karim’s Entally announces the debut of its additional party space in the same building, in addition to the updated menu. With room for up to 120 people (96 seated), the venue is perfect for events, functions, and family get-togethers. The location, service, décor, flatware, and food from their kitchen are all included in the packages, which start at Rs 999 + GST per person. Additionally, catering services will be offered from this location, guaranteeing a larger clientele and better customer service.
Karim’s Entally’s opening not only honors Calcutta’s Mughlai culinary legacy but also paves the way for fostering new memories through time-honored recipes.
