Recipe: Vegan Quinoa and Black Bean Salad By Chef. Narayan Dutt Sharma
Mother’s Day is just around the corner. You can make this easy Vegan Quinoa and Black Bean Salad recipe by Chef. Narayan Dutt Sharma and impress your mother on this special day.
Ingredients:
- 1 cup quinoa
- 2 cups water
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1/2 red onion, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup chopped fresh cilantro
- Juice of 2 limes
- 2 tablespoons olive oil
- Salt and pepper to taste
Preparation Method:
1-Rinse the quinoa thoroughly in cold water.
2-In a medium saucepan, bring 2 cups of water to a boil. Add the quinoa, reduce the heat to low, and cover. Cook for about 15-20 minutes or until the quinoa is tender and the water has been absorbed.
3-In a large mixing bowl, combine the cooked quinoa, black beans, red bell pepper, red onion, cherry tomatoes, and cilantro.
4-In a small bowl, whisk together the lime juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to mix.
5-Serve chilled at room temperature.
