The top international airline in India, Air India, announced the launch of a new global menu for its whole fleet. The cuisine incorporates worldwide influences through Pan-Asian, European Bistro, and geo-specific star dishes, while drawing inspiration from India’s varied culinary tapestry, from the coastal flavors of southern India to the royal kitchens of Awadh.

The majority of international ex-India routes, such as flights from Delhi to London Heathrow, New York, Melbourne, Sydney, Toronto, and Dubai; from Mumbai and Bengaluru to San Francisco; and from Mumbai to New York, have implemented the new menu. It will be gradually implemented on both domestic and international lines.

The menu tells a delectable tale by fusing Indian flavors with elements of other cuisines. There is a diverse mix of regional-inspired meals and international cuisines, including pan-Asian and European bistros, to appeal to any traveler. Travelers can enjoy a genuine culinary experience with dishes influenced by the region, such as South Indian cuisine, which brings India’s heritage to life.

Gourmet meals, handcrafted breads, specialty desserts, and custom wine and champagne pairings are all available to First Class travelers. While Premium Economy and Economy offer upgraded lunch trays with balanced, healthful alternatives with recognizable regional flavors and improved presentation, Business Class offers multi-course gourmet meals with customizable options and carefully chosen beverage pairings.

The highlights of the new menu include Awadhi Paneer Anjeer Pasanda (Veg Awadhi Thali), Murgh Massalam (Non-veg Awadhi Thali), and south Indian platter in First and Business Class, Rajasthani besan chilla, malabari chicken curry, and malai palak kofta in Premium Economy, Japanese Teppanyaki Bowl, citrus tiger prawns, and oriental napa cabbage and tofu rollmops in First Class and Seoul flamed prawns, manicotti forestiere, and Mediterranean tapas in Business Class, Chicken bibimbap and matcha delice in Business Class, Homestyle masala dal khichdi and homestyle stuffed parantha in Business Class and a vegan, gluten-free, and allergen-conscious menu.

Chef Sandeep Kalra, who recently joined Air India, created the magnificent new menu. The airline is continuing its transformation effort, adding new and improved planes to its fleet, as well as new cabins and the new Air India experience. In addition to foreign cuisine that appeals to today’s youthful travelers, including Korean bibimbap and matcha, the new menu draws inspiration from the variety of culinary experiences that India provides, from the traditional Delhi Street food to the authentic southern India tiffin. Using the Air India app, which offers chef’s remarks, allergy information, and customization options, guests may now pre-select meals online.

Air India guarantees the freshness of ingredients from the time of production to the last meal onboard by using seasonal food that is sourced locally to help local farmers and reduce food miles.
