Malpua And Gujiya Recipe By Chef. Narayan Dutt Sharma
Malpua is a sweet Indian pancake that is usually made during festivals or special occasions like Akshay Tritiya. Here’s a recipe to make Malpua:
Ingredients:
- 1 cup of all-purpose flour
- 1/4 cup of semolina
- 1/2 cup of milk
- 1/2 cup of water
- 1/4 tsp of fennel seeds
- A pinch of baking powder
- Oil, for frying
For the sugar syrup:
- 1 cup of sugar
- 1/2 cup of water
- A few strands of saffron
- 1/4 tsp of cardamom powder
Instructions:-
For the Sugar Syrup:
1. In a saucepan, add sugar, water, saffron strands, and cardamom powder.
2. Bring the mixture to a boil and let it simmer for 5-7 minutes until it becomes slightly thick. Keep it aside.
For making Malpua:
1. In a mixing bowl, add all-purpose flour, semolina, fennel seeds, and baking powder, and mix well.
2. Add milk and water slowly to the dry ingredients and whisk until the batter becomes smooth and lump-free.
3. Heat oil in a pan for frying.
4. Once the oil is hot, pour a ladleful of the batter into the pan.
5. Fry the malpua on medium heat until it becomes golden brown on both sides.
6. Take out the malpua from the oil and dip it in the sugar syrup.
7. Allow the malpua to soak in the syrup for a minute or two.
8. Serve hot and garnish with chopped nuts if desired.
Your delicious Malpua is now ready to be served and enjoyed!

Gujiya is a popular sweet pastry in India.It is made with a filling of khoya, dry fruits, and sugar, and is usually deep-fried. Here’s the recipe to make Gujiya:
Ingredients:
For the Dough
- 2 cups of all-purpose flour
- 1/2 cup of ghee or oil
- A pinch of salt
- Water, as needed
For The Filling
- 1 cup of khoya or mawa
- 1/2 cup of powdered sugar
- 1/4 cup of chopped dry fruits (cashews, almonds, and pistachios)
- 1/4 tsp of cardamom powder
- Oil or ghee, for frying
Instructions:
For the Dough:
1. In a mixing bowl, add all-purpose flour, ghee or oil, and salt. Mix well.
2. Add water slowly and knead the dough until it becomes soft and pliable.
3. Cover the dough and let it rest for 30 minutes.
For the Filling:
1. In a pan, crumble the khoya and roast it on medium heat until it turns light golden in color.
2. Add powdered sugar, cardamom powder, and chopped dry fruits to the roasted khoya.
3. Mix well and let the filling cool down.
For making Gujiya:
1. Divide the dough and filling into equal-sized balls.
2. Roll out a small dough ball into a small circle.
3. Place a filling ball in the center of the rolled-out dough circle and fold the circle in half.
4.Use a fork or your fingers to seal the edges of the gujiya.
5.Repeat the process for the remaining dough and filling balls.
6.Heat oil or ghee in a pan for frying.
7.Once the oil is hot, add the gujiyas and fry them on medium heat until they turn golden brown on both sides.
8.Take out the gujiyas from the oil and place them on a tissue paper to absorb the excess oil.
9.Allow the gujiyas to cool down and serve.
Your delicious Gujiya is now ready to be served and enjoyed!
