The much-awaited Hilsa Festival, a seasonal tribute to Bengal’s famous silver pleasure, has begun at Gondhoraj. Hilsa, who is revered as the “queen of fish” and deeply ingrained in Bengali culture, is the focal point of a celebration that is sure to please foodies, nostalgics, and daring palates.

The festival menu, which spans the monsoon season, is inspired by homes along the river, long-forgotten family recipes, and daring new culinary creations. The Gondhoraj culinary staff has painstakingly created a diverse array of hilsa meals, ranging from old favorites to modern takes.

The highlights at the Hilsa Festival are Elish Kabiraji, Smoked Elish, Elish Maacher Matha Diye Kachu Shak, Borishali Elish, Doodh Elish, Koromcha Elish, Padma Nadir Elish Bhuna, Aam Tel Diye Lau Pata Bhate Elish, Kumror Doga Diye Achari Elish, and Elish Peti Sondesh.

Owner of Gondhoraj, Ms. Johanne Mantosh, said, “The hilsa is a celebration of Bengali pride and monsoon memories. This celebration honors the ethos of Gondhoraj, which is to use food to connect people closer to their heritage. We want each taste to bring back memories of Bengali rainy afternoons spent with family over hot rice and hilsa”.

Head Chef Atikur Shaikh, the culinary force behind the festival, said, “From classic favorites to more daring combinations, every dish on this menu has been created to embody hilsa in all of its manifestations. We wanted to showcase this fish’s amazing versatility by providing guests with a variety of flavors and treatments that honor both traditional palates and contemporary inventiveness. Everyone will find something to enjoy, soothe, and surprise them here”.

Throughout August, Gondhoraj will host the Hilsa Festival, beckoning visitors to immerse themselves in the allure of Bengal’s monsoon treat and savor its flavors in a thoughtfully designed, emotional environment.
