The Estuarine Bhetki Collection, a collection of 25 Main Street Café‘s well-known Bhetki preparations made with real Estuarine Bhetki—river fish caught from the Ganges estuaries—is being introduced for the festive season. Up until now, all of the café’s fish preparations have been made with farm-raised Bhetki. The shift in sourcing will bring the estuarine fish to several well-known favorites on the café’s menu starting with this Puja.

The collection’s concept is purposefully straightforward. For the event, no complex new recipes are being developed. Rather, familiar dishes like Fish Poppers, Fish Fries, Fish and Chips, Grilled Fish, and Bhetki Ladolemono are being brought back with a new main ingredient.

The Estuarine Bhetki Collection consists of Fish Poppers, Fish & Chips, Fish Fingers and Kolkata Fish Fry, Grilled Fish & Mash, Moroccan Grilled Fish with Paprika Sauce & Herb Rice, and Bhetki Ladolemono.

The Estuarine Bhetki Collection is a seasonal intervention that modifies the ingredient’s quality and provenance without altering the aspects of the dishes that patrons already find appealing. Therefore, the change to Estuarine Bhetki during the festive season creates an intriguing intersection between something very familiar and the café’s modern, internationally influenced menu.
