Food in Kolkata is never treated as a mere commodity to be consumed; rather, people consume the history, geography, and culture of the individuals who created it.

No other city in the world rings truer than Kolkata when it comes to a deep, living legacy of diverse culinary influences. The chef added that in India, vegetables like potatoes or chillies change after a few kilometres. Hence, it is vital to go to the markets and know about the ingredients.

The city’s kitchens reflect a remarkable tapestry of global legacies, beginning with the Nawabs of Awadh, who gifted the iconic, fragrant Kolkata biryani complete with its legendary potato.

The Chinese community in Tangra contributed a completely new global phenomenon to the culinary landscape through the creation of Hakka Indo-Chinese food.

The Jewish community left behind a sweet legacy through historic institutions like Nahoms, while Armenian, Portuguese, and British traditions helped shape the grand continental dining culture that continues to thrive along Park Street and within the city’s legendary clubs.

“Ultimately, a true dining experience is defined by more than just the food on the plate; it is shaped by the company you keep, the conversation you share, the quality of service, and genuine hospitality,” said the chef.

The session provided a great scope for interaction between the attendees and Chef Shaun Kenworthy.
